Week 10: Spinach and Artichoke PIzza

Spinach and artichoke dip is a wonderful, dangerous favorite of mine. The key to good spinach and artichoke dip is the garlic and onion. So naturally, that’s where I started with this pizza. I chopped up one half of a white onion and pressed four cloves of garlic, which I mixed with a good amount of olive oil. I spread this all over the pizza. Probably not a good date night pizza if you have plans to kiss someone.

ImageNext, I put some dollops of cream cheese on top of the pizza. Cream cheese on a pizza is 100% gratuitous and delicious.  Plus it helped add some creaminess similar to spinach and artichoke dip without being over the top.

I then added a light layer of mozzarella and some grated parmigiano reggiano. Finally, I added pieces of baby spinach and marinated artichokes!

ImageI let this pizza cook for about 14 minutes at 400 degrees. The way it made my apartment smell was just fantastic. I pulled it out to see the cheese bubbling and oozing, just like spinach and artichoke dip.

This pizza was delicious and really captured the flavors of spinach and artichoke dip! And again, this was another super easy recipe that came together quite fast. Plus it’s a nice vegetarian option.
